Postpartum Freezer Cooking Plan + Free Printable!


So in case you missed the announcement, baby #2 is on his way to the Wadsworth home! He'll be here at the end of May, and we couldn't be less prepared this time around. I'm knocking on the door of my third trimester, and we still have no crib assembled, no clothes hung, and no diapers bought. So I'm hoping this post will give me the inspiration I need to get organized the way I was before Judah arrived.

I'm a classic type-A personality, so when all these people told me that it wasn't possible to prepare myself for Judah, I called foul. The only thing I couldn't fully prepare for, it turns out, was sleep deprivation. And when you're sleep deprived, it takes all your other planning and throws it out the window. So I planned even more by making frozen meals ahead of time. It turned out to be a good decision, since Tim swears his love language is food. I tell him that's not an option in the book. Doesn't seem to matter.

Starting in the beginning of my third trimester, I doubled most of these recipes I'm about to list. I froze and labeled the second half to enjoy later after Judah came. Seriously, it was one of the the best decisions I made pre-baby. I don't love relying on others to provide me or my family with meals, so knowing I had an arsenal of meals tucked away was life-saving {by the way, if you are planning on taking a meal to a new mom, make sure and follow these tips}.

Let's get started! Remember, many of these recipes have "accessories" {think tortillas, sandwich rolls, etc.}, some that can be frozen, and some that can't, so just make sure you have those stockpiled away.

Ibotta: How I Save Big Money On Groceries!

2. Capture your receipt. Use their free app to scan the QR code on your receipt.

3. Enjoy the rewards! It can take up to a day, but your account will be credited the amount you earned. 

4. Redeem your rewards. You can cash out for money or gift cards!

Turkey and Cheese Pinwheels


So I'm currently on this magical journey called pregnancy, with the added *bonus* of caring for a toddler at the same time. I'm freaking tired, you guys. Judah has an insurmountable arsenal of energy, and I'm just praying that Levi has a quiet spirit. But knowing my luck, he won't. In fact, you may never hear from me again after this summer.



But seriously, I'm so sickeningly in love with him I don't even care. Bring on the next crazy one.

Back to what I was saying. I'm tired. And hormonal. And always, always hungry, and always craving something. This pregnancy, that something is deli meat. My friend, Christie, introduced these to me several months ago. She made them with jalapeƱo poppers for dinner. And I knew we'd be best friends forever.

What I love about this is it's a glorified sandwich. If you were to serve me a turkey sandwich at a party, I might be put off {not really, I'd probably love it, but possibly someone else}. But cut it into tiny pieces and I'm smitten. It's incredibly versatile, and just a good choice all around. Oh, and it's my new favorite food, for anyone who's taking notes.


Ingredients:
  • Extra large tortillas
  • Turkey slices
  • Cheese slices
  • Cream cheese
  • Ranch
  • Shredded lettuce (optional)
  • Dijon mustard (optional)
  • Hummus (optional)

Directions:



Lay out your tortilla.




Spread a thin layer of cream cheese over the top.





I'm sure by now you're familiar with my Ranch dressing obsession, but even so, have you tried this stuff?? I had a coupon, and now I'm hooked.




Lay out yer cheese.




Add the turkey.




Roll it up nice and tight, ignoring my apparently 90-year-old hands in this picture. If needed, dab a bit of cream cheese on the end of the tortilla so it'll stick and stay rolled up.




The hard part is over. Refrigerate without cutting for a few hours.




After the few hours are up, go ahead and slice thinly into pinwheels. Sorry about the lighting. The days are short.




And that's it! You're done. Go. To. Town.
