We're cleaning house over here. With the food, at least. And not all of it...just the really, really bad stuff. You know the story of the boiling frog? The one where he sits in the water and it gets warmer, and warmer, and warmer, until suddenly he's boiling? That's our life with Judah's picky eating. One minute we're lamenting over the fact that he will only eat rolls one meal, and before you know it, all we have in the house are bags and bags of rolls. This can't happen. My child won't be a roll-eating kid who ends up with diabetes by the time he's 4 because all he's consumed in his short life was white bread.
Enter energy bites. When Judah wakes up from his nap, he's normally in a very, very pissy mood. There are times when he can literally cry and whine for 30 minutes upon waking up. After some research, a friend informed me that when toddlers wake up from naps, their blood sugar is very low, which can cause them to whine. So as soon as Judah wakes up from his nap, I give him one of these little no-bake energy bites. You would not believe the transformation. He goes from being groggy, crying and whining to energetic and happy, all in under 5 minutes. Thanks to my crunchy granola friend who shared this recipe with me...you know who you are :)
Ingredients:
- 1/3 cup honey
- 1/2 cup natural peanut butter
- 2/3 cup toasted shredded coconut (I used unsweetened)
- 1 cup old-fashioned oats
- 1/2 cup ground flaxseed
- 1 tsp vanilla extract
- 1/3 cup chocolate chips
Directions:
Start by toasting the shredded coconut. Set the oven to 350°, spread shredded coconut on a baking sheet and bake for 5-7 minutes until slightly browned.
Combine all ingredients (including toasted coconut).
Cool for 30 minutes, then roll into balls and keep refrigerated before eating.
