Blackberry Ice Cream

Hi, my name is Rachael, and I seriously hate fruit.

As part of my ongoing efforts to be a good mother, I am trying to do right by Judah by piling ungodly amounts of fruit into his diet. I'm really counting on the whole, "do as I say, not as I do" thing to pan out. There's no telling.

Anyway, I bought blackberries, and he hated them. So, being the responsible, level-headed parent that I am, I decided to incorporate them into his making ice cream out of them.

Totally cool, right? Not at all counter-productive.

He'll be all right.

  • 2 cups heavy cream
  • 1 cup milk
  • 3/4 cups sugar
  • 3 tsp vanilla extract
  • 12 oz packaged blackberries (that have been frozen solid)


First, we're going to combine the heavy cream, milk and sugar in a medium-sized pot. Put over medium heat and stir until the sugar has melted.

Add the vanilla and stir well. Leave on low heat.

Now grab those blackberries. These are fairly inexpensive, and just so darn pretty!

Preferably, you'd blend them in a food processor. I don't have a food processor, so I used a regular ole' blender. We'll get to how to handle it if you don't have a food processor like me.

Also, see that cute kid? He's trying to reach the fruit because I'm such a great mom that he just LOVES all healthy foods. Okay, that's actually not true. I think there was a cookie on the counter somewhere.

Blend it...blend it good.

Combine the blackberries with the milk/sugar/vanilla mixture.

STOP HERE: if using a blender and not a food processor, I highly recommend straining the blackberries with a mesh strainer. Otherwise, get ready to have some seedy ice cream. Even if you do use a food processor, it wouldn't hurt to include this step.

Stir well until combined.

Now if you're using an ice cream maker like I did, go ahead and pour it into the frozen bowl and let it churn for about 30 minutes, or until it gets to your desired consistency.

If you don't have an ice cream maker, you can always put this in a plastic food container and freeze it. It won't be the exact some consistency, but it'll be close!

You're done! Homemade ice cream is THE BEST. Even when it has fruit in it.
