Cheesy Western Breakfast Sandwich


Occasionally, I'll come up with a recipe that becomes a staple. To be honest, recipe staples are hard to come by. They're the meal that you could make more than once a week and still please everyone.


You can use an Arnold thin instead of normal bread, too!

Tim is a huge breakfast guy. If he doesn't get a big breakfast, he'll more than likely fall apart. But as a person who works full-time, I sometimes dread the prep for the "hearty" breakfast. It's hard enough to convince myself to shower in the morning, let alone cook.

One evening, I promised Tim eggs and fried potatoes. When morning came around, I realized that was a mistake. I improvised and came up with what Tim has dubbed the "Cheesy Western." I don't know why he chose that name-it's really not that cheesy, and I don't consider it Western. Whatever. If it works, it works.

Total time? 9 minutes.

Ingredients:
  • 2 eggs
  • 2 pieces of bacon
  • 1 Arnold Thin, or English Muffin
  • 1 red potato
  • Olive oil
  • 1 slice American cheese
  • Salt & pepper

Directions:


First, we're going to make a quick plain omelette, without the fixings. Scrambled eggs are hard to keep on a breakfast sandwich. To summarize, crack the eggs, whisk in a bowl, spray your pan, pour into the pan on medium heat, let cook all the way through, flip, cook some more, fold. Salt and pepper. Bam.



Cook your bacon. I do microwaveable, so it takes a whole minute.



Peel your red potatoes and shred. Pour oil into a deep pan on medium heat and add shredded potatoes. Add salt and pepper. Flip once the downward sign is browned.



Toast your Arnold Thin or English Muffin. Top with plain omelette, bacon, cheese slice and hashbrowns. Serve.



This meal is very flexible. You can add whatever you'd like, and take away whatever you'd like. Don't like bacon? Try a sausage patty. Don't like English Muffins? Just put it on two pieces of toast. Go crazy!
