Homemade Tortillas


Today, I ate tacos. At a dear friend's house. They were outstanding, but what made them better than usual was the tortillas. My friend, Rebekkah, made them right in front of me. They changed the taco. And to be honest, I think they changed me.

Rebekkah works super-hard. She has three wonderful boys, all under the age of 4, and I consider her one of the few legitimate super moms in the world. I'm even a bigger believer in her superhero status after eating her tacos.

We middle children are easily appeased.

Ingredients:
  • 3 cups flour
  • 1/3 cup coconut oil or shortening
  • Salt
  • 1 cup water

Directions:

This is easy. First, combine the water and coconut oil (or shortening). Stir together. Coconut oil will blend into the water. Shortening, not so much. Pour mixture into flour. It doesn't have to be perfect-just make sure you mix it up.

Add about a teaspoon of salt and combine. I love salt, so I salted each tortilla as I put it in the pan. I probably won't live long.



Divide into golf-ball-sized balls.



Lightly flour your workspace and flatten using a rolling pin until the dough is extremely thin.



Heat a pan to medium-high heat and place tortillas, one at a time, for about a minute each side. The dough will start to bubble.
