Redneck Salsa


I can't believe how warm it is. Here we are, January 13, and it's in the 70's outside. If you know me at all, you know that one of the biggest reasons I left California and headed to the east coast was to enjoy the seasons. This, however, is a little treat in the midst of winter.



While I enjoy salsa, I've never had any that I just went crazy about. That all changed when I met the lovely Lorrie Zelmer! This is copied directly from her awesome blog, but I just had to put it up to spread the word! The name is even great...redneck salsa!

Ingredients:
  • 1 can of mild Rotel
  • 1 small purple onion, finely chopped
  • 1 can of black eyed peas, drained and rinsed
  • 1 lime
  • 1 can southwestern style corn
  • A few sprigs of cilantro, chopped
  • Salt/pepper
Directions:



Drain and rinse the black eyed peas. Place in a large bowl.



Drain the corn and throw it into the bowl.



This is the corn I used. Good stuff.



Throw in the Rotel and combine.



Now, you can use as much of the onion as you'd like. I used about 1/8th, because I don't like onions. I'm trying to convince myself I do, though. I'll keep you updated.



Chop finely.



Look at all those purty colors.



Chop up the cilantro and add to the salsa.



I love limes.



Cut in half.



Squeeze lime juice into the salsa.



Add some salt and combine.



Let it refrigerate for an hour, then dig in!

Memorial Day is coming up soon, so take this to whatever gathering you and your family/friends are going to. You'll be the belle of the ball.
