Vanilla Iced Coffee



You know I've hit rock bottom when I post a coffee recipe on the blog.

My entire life, I was told that once I hit high school, I'd start drinking coffee. Didn't happen. Then I was assured that, yes, COLLEGE, would push me to the limit and I would start drinking coffee. Not true, but I definitely upped my intake of Diet Coke.

Then, when I was pregnant and glowing (i.e. sweating), I was promised that this would be the life event that would crack me, and that I'd soon become best friends with my coffee pot, screaming newborn in hand. False. I have an 18-month-old son, and alas, no coffee has been drank...drunk? I'm still on the Diet Coke, though.

What no one (including myself) knew was that I would reach that special place in my life on a random Wednesday afternoon, when there wasn't a child around, and I couldn't get off the couch because I just had to know if Rachel and Joey end up getting together (they don't, BTW).

The only coffee I've ever been able to stand is vanilla iced coffee, specifically Chick-fil-A's coffee. I started getting addicted to their coffee when it was the Calendar Card deal in January, and they gave it out for free all last month. Note to Chick-fil-A's marketing team: it worked. I'm addicted. And on this Wednesday afternoon, hair unwashed with mustard-stained yoga pants on, I knew I needed this pick-me-up. Except the baby was asleep and leaving him alone so I can make a quick trip to the drive-thru is frowned upon.

Please note: this is not Chick-fil-A's vanilla iced coffee, but it tastes pretty dang close. There are several other recipes out there that claim to be exact replicas. This is not one of those, but it is so close to the real taste, and it doesn't have any of the expensive syrups. About half a pitcher cost me less than $2.

Ingredients:
  • 6 cups of water
  • 1 mug of coffee
  • 3 tbsp vanilla extra
  • 1 can (14 oz) sweetened condensed milk
Directions:
  • Combined ingredients in a pitcher.
  • Serve over ice.
