No-Bake Oreo Marshmallow Bars


It's rare that I cook anything complicated anymore. Gone are the days of long, drawn-out recipes. Most of my meals involve tater tots and some kind of squeezable yogurt.

Every Wednesday, Tim and I attend Shepherding Group. We have a meal, which is always nice, and I inevitably forget about said meal until about 2 hours beforehand. Enter the No-Bake Oreo Marshmallow Bars.

Super easy, and takes about 15 minutes from start to finish. And they're good. Just Oreo's, marshmallows and some butter. That's healthy, right?

Naptime's almost done, so I need to hurry up and get all this out. Enjoy!


Ingredients:
  • 1 package Double-Stuff Oreos
  • 1 bag marshmallows
  • 1 tbsp. butter

Directions:


Who came up with this stuff? They deserve a medal...a chocolaty, cream-filled medal.




Crush up the Oreos.




Place marshmallows and butter and place in microwave-safe bowl. Microwave for 30 seconds at a time, stirring in between, until it's melted and combined.




Combine the crushed Oreos with the marshmallow/butter mixture.




This is Judah licking the spoon. In the corner. Facing the wall.




Spread into an 8x8 pan and refrigerate for about 10-15 minutes.




We went outside the play in the meantime. It was super windy, though, and Judah couldn't even stand up without being knocked over. He gets his gracefulness from his mother.




Cut up and enjoy!

Really, it actually is that easy and fast.

No-Bake Chocolate Peanut Butter Pie


The holidays are starting, which means that the holiday parties are starting. In case you're new to this blog, here's as little PSA: I live for the holidays. I hibernate during the summer. You might occasionally see me by a pool in the middle of July, but otherwise I'm locked up in my air-conditioned home binge-watching Netflix. I don't do heat. I do scarves, leggings, boots and hot chocolate. Heck, I Christmas shop year-round.

I also do no-bake. And peanut butter. And chocolate. And pie.



Also, if you're new to the blog, you don't know my baby, Judah. He's turning 1 in two weeks. It's devastating. I can hardly talk about it. He's all independent now and crawls around and doesn't need me. He's actually pre-enrolled in several ivy league schools. Such an over-achiever, this boy of mine.

He doesn't need me anymore. So, I'm back to baking. Which is how this pie came to be. I hope you love it as much as I did!


Pie Ingredients:
  • Store-bought pie crust of your choice. I used both graham cracker crust and Oreo crust, and the Oreo was my favorite (hint: more chocolate).
  • 14 ounces cream cheese, softened
  • 2 cups sugar
  • 1 1/2 cups creamy peanut butter
  • 1 tablespoon vanilla
  • 2 tablespoons unsalted butter
  • 1 cup heavy whipping cream

Ganache Ingredients:
  • 1 cup heavy whipping cream
  • 1/4 cup cocoa powder
  • 2 tbsp. butter

Directions:


First step: cheat. Buy a pre-made pie crust. The real stuff is great, but if you're going no-bake, you really need to commit to being totally lazy.




Beat together the cream cheese and sugar until smooth.




Add the peanut butter and mix.




Nom-nom-nom. Toss in the butter and combine.




Quickly whisk the heavy whipping cream until it stiffens at a peak.




Go ahead and add the vanilla to the peanut butter mix and combine. 




Add the whipping cream to the peanut butter mix and slowly and gently fold it in until well-combined.




Pour the peanut butter mixture into the graham cracker crust.




Place cocoa powder and butter in a saucepan and heat over low heat until butter is melted.




Slowly add in the heavy whipping cream.




Slowly whisk until thickened.




Pour chocolate ganache on top of pie.




Let cool in the fridge for 1-3 hours until set.

Easy Chocolate Peanut Butter Fudge



I've run into a little bit of a predicament. I'm having Tim's whole family over for Christmas Eve this year. Of course, we do the typical sandwiches, chips, dips, cookies, etc. Except for one thing.

I totally forgot the "cookies, etc."



So I have 8 people coming over to my home tomorrow night, on the eve of the biggest holiday of the year, and I have no dessert. Oh, and did I mention I have no money, as it's all invested in tutu's and video games and is sitting under my tree?

I asked my mom what she suggested, and she mentioned fudge. Fudge really hits the spot if you're needing something sweet, and it's cheap and quick to make. As in this took me not even 10 minutes to make. Not even.

Ingredients:
  • 3 tablespoons cocoa
  • 2 cups sugar
  • 1/2 cup milk
  • 1 cup peanut butter
  • 1 teaspoon vanilla flavoring
  • 1/2 cup nuts (optional)

Directions:


First, we're going to combine the sugar, cocoa and milk in a deep saucepan.



Stir immediately (the sugar will harden) and bring to a boil for about 1 minute.



Remove from heat, mix really quick and add the peanut butter and vanilla. 



Combine. This is one of those steps that needs to be done quickly, as this is fudge and it's job is to harden in a short amount of time.



Pour into a baking dish. If you want taller, thicker pieces of fudge, choose a pan that is smaller and deeper.



Refrigerate for about an hour or until hardened. It will look...well, exactly the same as before. Just hard.



Cut into pieces and gently remove using a metal spatula.



Serve!

Oreo Truffles



It happens to all of us: the Christmas Cookie Exchange party invitation. The source is unpredictable. It could be your mother-in-law, a co-worker...maybe even your pastor's wife.

Or, in this case, your mechanic's wife.

Our mechanic, Chuck, who owns Certified Automotive in Taylors, SC, is a dear, dear man. I can't count the number of times I've shown up, tears in my eyes, after some random tire-puncture or unintentional off-roading session. We are very blessed that he and his wife, Trish, attend our church.


So Trish invited me to a Christmas Cookie Exchange Party at their place. It turns out half the church had RSVP'ed. People know about my blog, and sometimes, I feel this crazy pressure to make the most awe-inspiring dish in the place.

I stuck with truffles.


The beauty about these truffles is that they're no-bake, and more importantly, they're affordable when every woman in the church is attending. Chocolate. Ain't. Cheap. I'm making 6 dozen, but the recipe below is for 2 dozen.


Ingredients:
  • 32 Oreos, crushed
  • 8 oz. cream cheese
  • 16 oz. white baker's chocolate (you can also use the equivalent in white chocolate chips)
  • Toothpicks
Directions:
  • Using hands, combine crushed Oreos and cream cheese.
  • Roll into small, round balls. Place on cookie sheet lined with wax paper and refrigerate for 20 minutes.
  • Either in microwave or a pan, melt the white chocolate. 
  • Using the toothpicks, stab each Oreo truffle and roll into melted chocolate, covering thoroughly. Place on wax paper. Refrigerate for about 30 minutes once they're all covered in chocolate.
  • Using remaining melted chocolate and a spoon, drizzle onto truffles in a zig-zag pattern until all the chocolate is gone.

M&M Pretzel Kisses


'Tis the season to bake.

Also, 'tis the season to no-bake.

I am that person who loves to bring in twelve types of baked goods for the girls at the office. I am also that person who makes grand plans to bake, and then, come Saturday, can't peel myself away from Grey's Anatomy re-runs on Netflix. Enter the no-bake treats.



There are a multitude out there, and this particular treat is nothing new. My only wish is that stores sold Hershey's kisses unwrapped. That's my biggest complaint, which means I have no real problems and this is super-duper easy.



Happy no-baking!

Ingredients:
  • Hershey's kisses
  • M&M's
  • Pretzels (not the sticks)

Directions:


First, pre-heat your oven to 350 degrees F. Lay pretzels out on baking sheet.




Arrange Hershey's kisses on the pretzels. Place in the oven for 2-3 minutes.




Press an M&M onto each softened kiss. Do this immediately before the chocolate hardens again.




Place on either a baking sheet or cutting board and refrigerate for 20-30 minutes or until kisses have hardened.




Now go eat 400 of them, because you will. I did. The salty-sweet taste is incredibly addictive, but hey, it's the holidays!
