Copy-Cat Olive Garden Fettuccine Alfredo

Word on the street is that Valentine's Day falls on a Tuesday this year. Kinda' setting us up for failure, right? I mean, it could just be me, but I'm not really anticipating being super-excited about performing perfunctory obligations after a long day of work. Candle-lit meals, romance, gazing into each other's eyes...it's all good, but for some reason, I'm not feeling it this year.


Don't get me wrong. I love my husband. Tons times a million. He's hawt (because hot just doesn't do him justice). His v-necks and fohawk drive the ladies wild. And don't even get me started on his dairy-air. Let's just say it fills out his skinny jeans nicely. My mother is reading this, though, so I'll just say that he's bootylicious. I've said too much.


Every year thus far, I've been obsessed with Valentine's Day. I totally judged women who deemed it a corporate scheme. I had an excuse to eat expensive chocolate and kiss my boyfriend a million times. Things are different now. We bought a house and need to build a fence so our 12 future children and 3 future puppies can play safely. We work. A lot. The prospect of moving looms on the horizon. We're tired. We need naps. And showers.

Enter Valentine's Day. We celebrated yesterday by going to see a movie, and a pizza was ordered. But surprisingly, my husband couldn't resist the big Valentine's Day dinner. And by "big," I mean super-easy, terribly inexpensive and absolutely exquisite.


Ever eaten at Olive Garden? I've been told that their fettucini alfredo is mac&cheese for adults. Offensive, right? But truly. Is there any alfredo sauce more divine than Olive Garden's? I say no. And get this: you'll likely save enough money by making this meal yourself that you can see "The Vow" twice. Your man will be thrilled. Plus you can wear sweats while you eat this.

That's a win-win if I've ever seen one.

Ingredients:
  • 1 stick butter
  • 1 teaspoon minced garlic
  • 1 pint heavy cream
  • 1 cup Parmesan cheese
  • 2 tablespoons cream cheese
  • Salt and pepper
  • Fettuccine noodles
Directions:

Cook noodles according to package instructions.


Melt butter over medium heat.


Yeah. Baby. Wait until it's just about melted, then you'll add the best ingredient.


Garlic. Garlic is always the best ingredient.


Toss it in there.


Let it cook for 2-4 minutes, mixing slowly.


Add the heavy cream.


Then the cream cheese. Mix slowly (still over medium heat). It will take awhile for the cream cheese to melt into the rest of the mixture.


Wait until mixture is slightly bubbling, not boiling.


After mixture begins bubbling slightly, add the parmesan cheese. Let it heat up for 3-5 minutes or until the cheese is completely melted.


Generously add salt and pepper, especially the pepper. Mix well and lower heat slightly.


Your noodles should be done by now.


Feel free to steam or microwave some broccoli.


Did I mention my husband made this? If that isn't proof that this is easy, I don't know what is. And it really does taste just like Olive Garden's alfredo sauce.
